Review: Strawberry Rhubarb Custard Pie from Food Wishes

I'll be honest: because I've never had rhubarb in any form before, I can't say for sure if this came out properly. What I can say is that it was pretty damn delicious. Chef John's recipe was easy to follow, and the video was entertaining, as always. I may go so far as to say that Food Wishes is the best food-related website/channel on the internet.

Taste wise, my pie came out very nice, but I could have tweaked it a bit. For one, I didn't put enough custard in relation to strawberry and rhubarb. As a result, a few pieces of rhubarb that were poking out of the top burnt a bit, but it wasn't that obvious when eating. That being said, it was a bad look, so I cheated a bit and flipped those pieces over onto the paler side (you can sort of see this in the picture of the full pie). Like Chef John, I used a premade pie shell. Since the filling was definitely the star of the show (as in most pies, I suppose), I can't really say that I regret not making my own pie dough. The jam trick he recommends for the shine didn't work with the chunky textured jam I used, but I'm sure a jelly or more easily spreadable jam would've worked perfectly.

All in all, this is a great pie. If you've never tried rhubarb, I'd recommend making this pie for your introduction. From now on, if I see an option to buy or eat rhubarb, I'm definitely taking it.
